Cutlery Review Superior slicer edge
Two years ago I bought this exact Victorinox blade, only it's fitted with a nice looking wood handle and a hefty pricetag, especially for a stamped blade.
I instantly noticed that this edge was superior in every way to anything I've used in the past for slicing bread and pastry: very quick, effective, less crumble prone slicing. Soon I also found this is really a great knife to use for almost anything except chopping, or carving meat when perfectly smooth slices are preferred.
Because the knife is quite lightweight and the tip is round, it never feels big in an intimidating way; rather it's just very easy to handle, and very effective for slicing anything of any size, big or small. Lettuce is one stroke per slice: the whole thing dealt with in seconds and ready for shower.

After all the use mine has had so far, it still performs like new, and that's with no honing whatsoever. Can't really do that with reverse scallops anyway, and I don't think it will need any pro touch up for a long time.
The triple-riveted wood handle and almost full tang is also holding up perfectly: absolutely no quality issues.

My best guess is that forged or stamped blade likely makes little difference for this particular type of knife, or more specifically this type of edge. If anything, I'd expect that some will welcome the lower weight of a stamped 10" blade. Just to be clear, I don't think a stamped 10" chef's knife would seem like a terribly good idea for a kitchen tool, but this type of slicer certainly handles differently and I doubt that many will find added heft desirable; maybe not even were it available at a similar price point.
That said, I'll be happy to give this one to my mother if I indulge myself with the forged W�sthof Classic super slicer. That's just me, I like the red Trident logo. Actually, she needs a good bread knife just like everybody else, and if it's not reverse scallops, then it's not a bread knife, not in my spoiled opinion.

The price/usage ratio of a kife like this is probably hard to come by with any item inside or outside the kitchen. As long as it's got the edge, get any super slicer you fancy, and don't let anyone tell you that a 10" knife is overkill or impractical for home use, because it just isn't necessarily so. Unlike a 10" chef's knife, there's hardly a learning curve with this one, and the generous length allows for greater [range of] productivity.

Cutlery Review Great stuff, hard to find elsewhere

the quality is ok...however, the tray is too big...i have nowhere to fit it...and the compartiments of the tray are too small, so there aren't a lot of things i can fit in there...oh well...i might end up selling it...i don't really need it...

Design:
5 stars as there's 7 slots! One each for (1) dinner knives (2) dinner forks (3) soup spoons (4) salad forks, (5) teaspoons, (6) butter knives/sugar spoons/oyster forks & (7) a long slot for the pie server & serving forks & serving spoons.
Quality:
1 (one) star - wood sides & melanine bottom. Workmanship is VERY poor. Initial delivery had gouged & poorly repaired base as well as broken off pieces of uprights glued to base. Ordered a second in hopes of semi-quality (as I really needed 7 slots & 14" x 18" dimension) and that one was OK.

Cutlery Review The best knife I own!
I do a lot of cooking, and this knife is one of the best cutting knives I have. I use it to chop vegetables, peel apples, potatoes, etc. It is very sharp and has lasted a long time. I even prefer to use it over any of the larger knives I have.

Cutlery Review Almost a hit.
I was a little surprised with this set. Don't get me wrong, you should buy it, but the edge lacked a little of the visual refinement of the rest of the line. Also, the block of wood shipped with the knives is made of pine, or some other very soft wood. It would be nice if it was a Maple match to the block that shipped with the 15 piece set. This is a very good set, but it could use a little help upon arrival with a very fine whetstone, and a proper hardwood block. If you don't mind 2 minutes per blade with an ultra fine stone, this set compares well with the best of the two big homegrown German brands. Don't get me wrong, this set is far above any stamped steel set (even the stamped offerings from the big German brands). Buy it and enjoy!

These knives are a pleasure to use. The have a nice heft and balance, classic look, single piece tang fabrication, and a very stiff blade. I also liked the price.

Cutlery Review Excellent set of forged steak knives
I have had these knives for about 6 months now and could not be happier. They have excellent balance and feel. A major improvement to the stamped knives that comes with the Calphalon 15 piece set. The wood storage tray that comes with the knives is not very nice (light pine with no finish), but I don't use it anyway.

    Cutlery Review Dont waste your time
    i bought this oyster knife because i work in alaska and i have to shuck oysters daily i went to use it on the first oyster and it bent it took me over an hour to shuck 6 orders (36 oysters) which normally would take we 20-25 mins so i suggest that you do not buy this knife go to a local kitchen supply store and purchase one from them

    Cutlery Review This is not an oyster knife.
    It is preposterous that they would even call this thing an oyster knife. This piece of garbage was literally destroyed after opening one raw oyster. I could see that was going to happen before I even tried it. It's just a flimsy thin piece of sheet metal. Anyone who has shucked raw oysters knows how much torque it takes and how rigid the blade needs to be. Apparently these guys don't know anything about that. Shame on "OXO/Good Grips" for calling this thing an oyster knife.

    Cutlery Review Professional Skill Knife - Not for the amateur
    This is an excellent knife but not for the amateur. It is designed to open an oyster from the side by sliding it along the side groove along the top and bottom shell. By entering from the side you can cut the abductor muscle and flip the top-shell off. It is not a "top-popper" that is designed to open the oyster from the hinge. However, if you sharpen this knife it can be used for hinge-entry by moving the knife with a side-to-side motion while applying pressure, once an incision is made you can then turn your wrist while rocking and pop the hinge. In any case, shucking is an art that you develop over time. I shuck for a living and anyone (a previous reviewer) who takes 20 minutes to open 36 oysters is not a professional but is laughable. The bottom line is if you don't open oysters on a regular basis, and don't really know how to open an oyster, then get a top popper knife with a thick shaft. But if you know what you are doing or want to learn the slick and easy way to open an oyster, this knife is exceptional and I use it every day.

    Cutlery Review Who Knew??!
    This is my third pair of kitchen shears. The first was $10 and lasted a week. I thought the second pair was just fine until my Shun shears arrived. These cut well and are also very smooth while cutting. They fit my hand nicely. I can really feel the difference in quality. These can perform different functions -- opening bottles, jar opener, nut cracker -- one blade has a curve in it to accomodate bone. I love that they are dishwasher safe.

    I probably wouldn't have purchashed these if I were not completing a Shun set. But now that I have them, this is what I should have been using all along.

    Cutlery Review Shun Makes High Quality Items
    I love Shun and I love these kitchen shears. The whole thing is very heavy duty and feels of quality and durability. If you open it up all the way, it unhinges very easily for ease of cleaning. When you put it back together, it's solid again. It's very easy to do and does not sacrifice sturdiness. These are all purpose kitchen shears and I can't think of any improvements. The handle is made of some heavy duty plastic that's lines for non-slip. It's very rugged and utilitarian, but I'm not that hot about plastic. Luckily, it looks good and the quality and feel still can't be beat.
