Cutlery Review Ok but
This knife has great potential but was very dull when I received it. Also, there is no protective cover - my husband had to make one out of the original plastic packaging!

Cutlery Review Before buying this......
check out the highly rated Chicago Cutlery 'Centurion'. It sells for $19.99 and looks to be a duplicate of this one. Given the $39.99 price of the Calphalon, I'm not sure that the description is accurate. The description says the Calphalon Santoku Knife is made in Germany. However, I have found that virtually the entire Calphalon line is being manufactured in Communist China.

I recently got into some Asian cooking and wanted and all purpose knife to use, after much thought I went with this knife. It has a very very sturdy design and works great for everything. Great buy!

Cutlery Review Nice, but not worth 65.00
When I was washing the knife I noticed that the fine edge on the serrations had bent over to the non-scalloped side of the blade. I guess i found this a little irritating since i spent a fortune on this knife. It cuts bread fine, but i would not purchase again if i had the choice.

Excellent ability to cut breads. Only drawback is that it's a bit too long for our knife block. Just double check on the length of your knife block if this concerns you.

Cutlery Review lesser of the 2 Henckels bread knives
A fine knife for most bread but when cutting large, tough loaves it has trouble "finishing" off the bottom of the crust. A better design is a knife with a slight curve, and sure enough Henckels has one of those as well. If you like hearty, thick crusted bread, then spend a few more dollars and buy the 9" instead.

    Cutlery Review Cheaply Made
    I tried this knife at Sur La Table at the Furi demo. They appeared to be very sharp. However I did not like these knives for the following reasons

    1) I dont care much for the cheap plastic-like orange handles


    2) The finish on the knives appear to be cheap. Furi implies that these knives are made in Germany. However they are cheaply "Made in China". Now generally I dont care that much .. everything is now made in China anyways.. But when I am paying so much money for a product, I was hoping it was made in Germany or USA.

    3) The case is even more cheaply made.

    Personally, I would wait for a sale on the Global or the Wustof knives.

    Cutlery Review Henckels Twin Cermax Santoku Knife
    Choosing a knife from one of the fine knife makers (e.g. Kasumi, Wusthof, Global, Shun, etc.) is ultimately a personal preference. The fact is that they all make knives that are physically capable enough for the most demanding of chefs. This means that there is no one best knife for every user. The Henckels brand maybe poo-pooed by elitists for its ubiquity in department stores and its production of very low quality knives under the same basic Henckels name (e.g. the one man line) but this knife is very different. The blade is made in Japan, unlike most Henkels knives, and it is aesthetically one of the most beautiful knives you'll see with its layered linen handle. The 7'' Santoku has a very nice weight for those of us that don't feel strong enough for the stout Wusthofs, or feel too strong for the featherweight Globals. The balance is much more even throughout the blade than the handle-end heavy Henckels 4/5 Star Santoku knives. The knife comes sharper out of the box than any knife that I've ever seen. Keeping it that sharp over time is up to you. Its certainly worth trying to see if this knife suits your own personal preference, as it suits mine.
