excellent sharpening and easy to useThis sharpener works extremely well on all my knives and is very easy to use. It does not require that you maintain a twenty degree angle - it does it for you. Also it doesn't require oil or water. You just swipe the blade through a few times and that's it. It's truly perfect.

Now this is sharpWhen I bought my Henckels (not the el cheapo Henckels International, mind you) knives I was looking for a sharpening steel but ended up with the pull-through gadget they call a "sharpener". Someone's already pointed out the difference, that the device is a "honer" that merely sets the blade straight. It returns usability but doesn't actually SHARPEN, i.e, shave off metal and recreate the edge. After reality set in that I could keep running my knives in this honer until I was blue in the face and never increase the sharpness but merely prolong it, I decided to look for a way to really sharpen a knife.
Local and mail-order services didn't appeal to me because I didn't want the knives out of my hands or tested on stuff I wouldn't cut in my kitchen. So I went looking for sharpeners I could use in the home.
- As I read opinions, the whetstone seems to be the best possible way. The electrical sharpeners are about the only alternative that actually re-create an edge, so I thought if the best of them doesn't satisfy me I'll have to go with a whetstone. And I bought this machine.
- As one reviewer pointed out on a slightly different model, READ THE INSTRUCTIONS. If you think you'll simply get an edge by running the blades through the six grooves in order, you will be sorely disappointed.
- The first and second pairs of grooves are for different knives and the third works with the first, maybe the second too. And that's not all.
- You have to run the knife, test for a good burr on the new edge, and polish the edge straight to get your razor sharpness.
- Don't forget to wash the knives, before and after the sharpening. You don't want food or moisture in the sharpener, or microscopic metal in your cut food.
- Big question: is it razor sharp? Yes, but under some conditions. I tried this with five knives: Four Henckels five-star blades, and one some-other brand blade. On one Henckels santoku, I made do with a minimum burr and got a sharp blade, but it wasn't razor sharp. This will be done over. The other brand blade got a nice burr and everything, but never got razor sharp, though it was sharper than it had ever been. The three other Henckels knives, they are as close to razor sharp as anything.
- What do I consider razor sharp? I ran an edge across a small part of my arm and it took off all the hair. THIS IS NOT SAFE - I have shaved with a straight razor so I didn't cut myself. DON'T DO THIS, read on: I used the same blade to cut a slice off a vine ripened ripe tomato without using a chopping board, and established this test: The slice comes off with no skin left on the end of the slice where the knife finishes the cut. That is razor sharp. Vine-ripened, ripe tomatoes tend to have a skin that is almost like plastic wrap - thin and very resilient to the sharpest blade.
- None of my newly bought knives were able to pass the hand-held ripe tomato or hair-on-arm test when they were new. So the sharpness is better than the factory blade.
- The second groove can put a microscopic serration on the edge for better cutting in some situations. Or sharpen a serrated edge. I haven't tried this yet, will update the review when I do. But I'm very happy with this product.
- Criticism that won't take away a star: Reading the manual in this age of short-attention can be painful because the text is small and the lines too long. Paragraph breaks are scant. More pictures, narrower columns and some white space couldn't hurt, especially here where reading the manual is a requirement (not just an overload of warnings or obvious, unnecessary direction)
- All this seems long and tedious the way I describe it, but once you've read the manual, you will have your knives sharp in minutes. So sharp you may be tempted to try to work on the factory edge of a newly bought knife. Just remember, it's important to start with a reasonably good quality knife whose metal can stand up to a fine edge.

Do you want razor sharp knives?This sharpener does an absolutely GREAT job sharpening any knife. All of my knives are now sharper then when they were new, even sharp enough to shave with. No regrets from this buyer!
My knives are servicably sharp...For an electric sharpener, this one is nice. I've used it on five knives now, and all of them are sharp enough to slice a tomato without any pressure from me (just run the knife across the surface under its own weight). So I'm happy. I know that on reviews of the previous models some people complained that the sharpener didn't get their knives razor sharp. This one doesn't either. But it gets them plenty sharp enough for cooking! And much sharper than the knife vendor here in town does...
The only serious negative is that I'm not very impressed with the manual. While it does give instructions on how to sharpen your knives, I didn't think it did a good job of explaining the different types of edges this sharpener can create.

sharp would be niceGreat set I just wish the larger knives would of been sharper, but that's ok it come with a sharpner
Excellent for Home UseI bought these to use at home, where I cook 4-5 nights per week. I have had my set for over a year now, and am very pleased with them. All the knives have stayed so sharp that I did not need to sharpen them. I like the versatility of having so many different knives and they look great in the block on my counter. I am very pleased with my purchase!
If I worked in a restaurant and did hours of prep work, I would probably want a set with more heft, but these are fine for me. And what a price!

You have to get this...Wow is the only word I can think of the describe this Meat Tenderizer. I purchased the 48 Blade and love it! No more poking my steaks with a standard eating fork to make the holes for marinating. Used on a london broil and it melted in your mouth is was so tender. This a must for the everyday cook! I recommend...

Nothing beats a good whetstone but...Nothing beats a good whetstone, but you need to not only know how to use one correctly and hold your blade at a very precise angle, but you also have the time to do it right. I originally bought the (much) cheaper two-stage Chef's Choice sharpener which was great for quickly and accurately honing cheap kitchen knives. I've even used it on machettes, anything with a flat grind can be sharpened with these things...
Since upgrading to high-end Shun knives, however, I was uncomfortable with the amount of metal the old one removed and the rough finish it left. After heavy daily use, a manual honing rod simply isn't always enough to keep your blades razor sharp so you'll either need a whetstone or a mechanical device. Dull knives not only work poorly, but they are dangerous to use as well. I've tried the Lansky rod system but it's very hard to hold certain knives in the clamp, which also leaves scratch marks. Not an acceptable solution for $125 plus blades. Sooo, I've upgraded to this device to supplement my whetstone.
This one costs three times as much as the two-stage model, but it works at least three times better. Gradations between the hones is excellent and the third wheel leaves a nice smooth finish. After the initial sharpening you'll probably never use the first one again on any given knife but it's nice to have available. The guides work very well too, helping you maintain a consistent, accurate grind. The down side is that you cannot sharpen hunting knives, daggers, or other blades with a diamond grind or large center spine. Anything flat-, tapered, or hollow-ground works fine. Be cautious not to remove too much material with repeated use though--the diamond hone wheels are very quick and efficient, sometimes more so than you'd expect... They seem to hold up quite well over time too.
All in all I'm glad I bought it. Still need to do things manually from time to time depending on the type of blade and how delicate I need to be, but this really is a top of the line sharpener. Recommended.

Super SharpenerJust as advertised! This sharpener is great! Knives that were very dull now slide right through anything being sliced! Sorry I waited so long to get this sharpener! The price held me back- but it's worth every penny!
How to avoid scratchesThis is a great product. It is the first electric sharpener I've purchased, and I am pleased with it's performance. In regards to a previous reviewers comments about scratching the blade, I think I know the solution. Personally, the scratches mean little to me if I have a razor sharp knife in trade, but for those of you who want to retain the looks of your knives, read on. The cratching, for me, only appeared on a knife that was very dull that I had to use the roughest stage on 2-3 times. What I believe happened to cause the scratches was that this stage removes so much metal and in such large pieces that they inevitably get on the plastic guards that keep the blade in the correct angle. When you reinsert the blade for another pass, these particles scratch the blade. I didn't notice such scratching on the other knives and they only required the finer stages of sharpening, therefore the particles where less and smaller. I suggest if using the rough stage, wipe off your knife after each pass and slide a cloth down between the plastic guard as well. Some light scratching may even polish out with a metal polish such as Flitz.

Just take your timeIt took a little longer than the directions said it would, but this sharpener got my kitchen knives very sharp. I would recommend it.
Amazing results in a short timeI bought this at Target and didn't expect much. To my surprise the first knives I sharpened cut like butter through a thick orange peel right away. I did four more knives in succession, each one really dull, and they now are like new. I highly recommend this. It really beats the cheap, hand-held variety, especially if you have a drawer-full of old knives that need sharpening.

Works as advertisedI have a set of Henckels Professional 'S' knives. I was always disappointed with the sharpness until I sharpened them with the Henckels Twin Sharp Duo Knife Sharpener. I'm not a chef nor someone who is enthusiastic about cooking and preparation. Follow the instructions and the sharpener works as advertised. I can't compare it to another sharpener and I didn't try to cut paper with a sharpened knife. The knives cut food much better. Good enough for me.
Good productThis beats doing it manually. Does not provide the original cut when first bought, but for just secs to sharpen knife it is well worth the investment. Still use the steel to get a nice even luster and shine at the tip.
Works pretty good.I replaced my steel sharpener that came with my Twin Cuisine set with this one. Works great and looks good enough to leave on the counter.

Quck and easy knife sharpenerI looked for a while at different knife sharpeners. Most of them are too bulky and I did not have space to store them. And they were too expensive. This little one is compact and does the job very well. It took me about 15 minutes to sharpen all my knives - under a minute for each knife. Instructions are clear and easy to follow.

my own fault... for not shopping aroundit is easier to take things back to a local retailer if you think something is wrong with a product. i believe the sharpener wheels are misaligned so the knives are being unevenly sharpened. it does take off metal. i'm going to do more practicing and not on my top of the line knives.

best sharpener I've ever hadI'm a hunter and a fisherman (mostly fisherman) and have had a devil of a time over the years keeping fillet knives sharp. In order to fillet a fish, a knife sharp is everything. I used the chef's choice sharpener on my fillet knives and it got them almost razor sharp. Encouraged, I went and sharpened all the kitchen knives and the box full of pocket knives that I have received for birthdays and so forth over the years. I have nothing but good things to say about this product. Highly recommended!
